 3-Day Whiskey Workshop – Edgefield Distillery– $2,500

This three-day hands-on class cover the fundamentals of whiskey distilling. Participants will be able to smell and taste new-make spirit as it is being distilled. Topics covered in this class include mash preparation, basics of fermentation and wash production, mechanics of distillation (stripping & spirits runs), “making the cuts”, barrel maturation, proofing, and bottling.

 3-Day Brandy Workshop  – CPR Distillery– $2,500

This three-day hands-on class cover the fundamentals of brandy distilling. This week long advanced class offers a rare opportunity to study with Master Distiller & Master Blender Hubert Germain-Robin, International Consultant, creator of world-renowned Germain-Robin brandies and author of “Traditional Distillation: Art & Passion” and “The Maturation of Distilled Spirits: Vision and Patience.” Germain-Robin reveals many of the secrets of slowly nurturing the distilled spirit to create a supple round flavor and pleasant mouth feel.

2-day Blending & Maturation Workshop – $950

This class will be a more in-depth version of the 1 day Blending class.

Day 1 will go into more depth than the 1 day class as we examine the traditional philosophies and methods of blending whiskey and rum, and “cross-over” techniques in blending, and borrowing from one tradition to the other to create something new. Other topics will include how the barrel room or warehouse can be used as a tool to achieve certain aromatic profiles, wood policy, the effects of entry proof, water reduction or “proofing” theories, etc. Finally, we will discuss the practical applications of blending, selecting and balancing the proper components for the blend to achieve a targeted whiskey or rum profile, and the impact on flavor of spirit and wood.

On Day 2, we will discuss cellar management, learn what to look for when creating a blend when analyzing barrel samples, and finally, creating blends that will be judged by other class participants.

 1-day Gin Workshop – Ryan Martin Distillery – $400

This one-day hands-on class explores designing and distilling your own gin. As well as more formal instruction, the session will allow attendees to discuss the more nuanced aspects of bringing a spirit to market. Topics covered in this class include the mechanics of distillation and rectification, making the cuts, methods of gin production, working with botanicals, and filtration.

 1-day Rum Workshop- New Deal Distillery – $400

This course will introduce participants to the different styles of rum created from sugar cane and its derivatives, such as sugar cane syrup and molasses. Participants will be able to smell and taste new make spirits as it is being distilled. Topics covered in this one-day class include rum wash preparation, basics of fermentation, mechanics of distillation (stripping and spirit runs), making the cuts, barrel maturation, proofing and barreling.

 1-day Vodka Workshop – Trails Distilling – $400

This class examines the fundamentals of Vodka production, and how to work with both fermented grapes and NGS Bases. Topic covered in this class includes the mechanics of distillation and rectification, making the cuts and filtration of neutral spirits.

1-day Malt Whiskey Workshop – $400

This workshop covers the basics of distilling malt whiskey from grain to glass. Subjects to be covered will be making a mash, fermentation, charging the still, making heads and tales cuts, barrel maturation, proofing and gauging.

1-Day Distillery Design & Expansion Bootcamp – $400

Distilleries looking to add production capacity in place need to have a firm grasp on the limits of their space from a building code and fire code perspective. In depth review of code requirements – and limits – for distilleries, zoning codes, design lingo, possible construction methods, and special considerations for facilities that will keep running through the construction process. We will also address when it is time to throw in the towel and get a new space.
