Absinthe in Mendocino: Germain-Robin clarifies the Green Fairy

Once again, the masters who work for and with Craft Distillers, producers of the world-class Germain-Robin brandies produced in Ukiah, have created another singular product.

Germain-Robin Absinthe Superieure will be released on August 1. The historic spirit has experienced a revival in the United States following its return to legal status in 2007.

Crispin Cain, President of Greenway Distillers and his partner Tamar Kaye, have been perfecting their formula for absinthe for the past 15 years. Cain, who worked with Germain-Robin co-founder Hubert Robin as assistant cellar master, has continued the tradition he learned from his teachers: to create the finest spirits in the world, made in small batches, using many of the same processes that have remained unchanged for the past 500 years.

Ansley Coale, founder of Craft Distillers, which began the distilling of Germain-Robin brandy and now markets several other small-batch spirits, is delighted with the new product, which will be distributed locally and in the Bay Area.

“It’s great to maintain this as a regional product,” says Coale.
