The Summit will conclude with a panel discussion from participants on the challenges and reward of being a distiller in the region.

An overview of rum styles including aguardiente, cachaça, and rums made from many different forms of cane sugar. Obstacles to craft distilling, being that there are monopolies or state control in many countries. I know of about two other small distilleries here in Panamá, have seen some in Brasil, and know of one or two in other countries. Curious fact is sugar cane is grown in essentially every country in South America except Chile.

|Eliot Logan-Hines is the founder and CEO of Andean Spirits, the makers of CHAWAR. Eliot has worked for over 15 years in forest conservation and sustainable agriculture throughout Latin America. Eliot received his master’s in environmental management from Yale University. He has lived in Ecuador for the past ten years learning and working alongside indigenous communities in the Amazon and the Andes. He is passionate about plants, plant medicine, and indigenous knowledge.
