House Spirits started up ten years ago in a 3750 sf non-sprinklered F-1 space, and no one paid much attention to what we were doing. We have operated continuously in that space without incident, but in subsequent years there have been a few distillery fires around the country and a proliferation of craft distilleries. So, when we started the new distillery project last year, we faced City Building and Fire Departments that were very curious, and who lacked experience with the application of general fire code concepts to specific distillery needs. This and other issues resulted in significant delays and added expense to our project, as we hired engineers, code consultants, and other technical experts to help us and the City design and build a safety-first, code-compliant distillery.
