Keynote Speaker

Mermaid Gin and the Isle of Wight Distillery

Join the team from the Isle of Wight Distillery, winners of multiple trophies from the American Distilling Institute’s International Spirits Competition. Based on a small island just over three times the size of Walt Disney World Resort in Florida, they are certainly punching above their weight!

They will discuss their approaches to making gin, vodka, and rum, as well as their thoughts on environmental matters and – of course – the story and success behind their stunning bottle.

Contract Distilling; A Guide to a Successful Partnership – Panel Discussion

Independent, third party, or contract distilling is something many spirits brands and distillers will likely experience at some point, either as a provider of the service or as a customer. We take an overall perspective with a panel of experts experienced in all aspects of contract distilling.

The challenges and benefits for all parties involved will be discussed, along with topics such as how you transfer from third party distilling to setting up your own distillery.

Botanical Blurb – The Language of Gin Flavors and Ingredients

A great gin is a complex and harmonious combination of various different botanicals often sourced from far-flung locations around the world and sometimes sourced right outside the distillery door. But how to explain these flavors to consumers on an international level, why should they buy your gin over others? This session will discuss the science and art of gin tasting notes as well as how to communicate your gin on the front label, back label and online.

Practical implications of the multishot method

Following previous talks looks at one-shot and mutli-shot methods of gin production and the efficiency benefits of multishot. This talk will focus on the practical implications of this method from distillers who have experience of various different production methods. Including the potential benefits and pitfalls.
