Preventing Carcinogens in your Bourbon

Ethyl Carbamate (EC) is a potential carcinogen found in many alcoholic beverages. Although it is not currently regulated in the United States, many global markets have limits for the level of EC in spirits. This presentation will highlight the findings of a Distilling Research Grant funded project that looked at the levels of EC in bourbon to determine how to mitigate them.
