Chef Michael Giacomini opened many of San Francisco Bay Area’s standout seafood restaurants. He jumped out of the frying pan into distilling in 2005, with the founding of Stillwater Spirits. Giacomini now lives in Northern California, watching the craft distilling movement from a safe distance and making tonic water.
