A complex and balanced profile in a spirit is a must to increase the chances of standing out in a crowded spirits market. It is well known that congeners formation during fermentation sets up the basis from where distillers can shape their spirits through proper distillation techniques. This presentation aims to provide distillers with a good understanding of yeast diversity and some tools to select the right strain for the task, one that is adequate for the feedstock used. It also provides a guide on how to manage the fermentation process itself to achieve the range of desired congeners that will directly impact the profile of the distillate.
